I barely seems Wallace can be loyal with only one girl, because the fact that his gym full with his fangirls ^^

I wonder if Pokemon company would make this pairing to be a canon, because they didn't hinted it even only a bit, both in the game nor in the anime....

It's actually canon, but only in the manga. In Pokemon Special, in fact, is highlighted in several places a certain bond between them, which implies a feeling never stated or even more a love story ended badly. At first, in fact, Winona at the meeting of gym leaders, insists to Wallace to stay at his place of simple gym leader, because they are no longer romantically linked in any way.
In Emerald Chapter, then, explicitly claims she can't have a relationship with Wallace because he is too superior to her in battling. They are seen as an older version of Franticshipping, ie SapphireXRuby (canon in the series)
